It constitutes a source of nitrogen more readily available than milk or milk powder and has a high level of carbohydrate. As with milk powder, the calcium level is relatively high. The product may be used on its own or in conjunction with other ingredients in media for isolation of lactobacilli and bacteriological examination of dairy products. It has a high tryptophan content and is therefore used in media for testing the indole reaction.
